Here is the recipe for the French Toast Cupcakes. They are really easy to make and awesome to eat.
Prep time: 10 mins
Cook time: 25 mins
Total time: 35 mins
Serves: 12 cupcakes
Ingredients
French Toast Cupcakes:
3/4 cup butter, softened
1 cup sugar
1 1/2 cups cake flour, sifted
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk, at room temperature
1 teaspoon nutmeg
1 teaspoon cinnamon
3 eggs
Maple Buttercream Frosting:
2 Sticks butter, softened
2 3/4 cups powdered sugar
2 teaspoons heavy cream, at room temperature
1 teaspoon maple extract

Birthday Treats
So I haven't made a post in a while so I thought I'd start back up with lots of sugary treats. :)
The boyfriends birthday was a few weeks ago and I asked him what he wanted and he told me "cookies". So I decided to make the chocolate chip Oreo cookies that I like to put people in a sugar coma with. I also found a recipe for cookies and cream cupcakes that looked good. My boyfriend also found a recipe for French Toast cupcakes that looked amazing. This is how they turned out:
The cake is like a spice cake and would make an awesome cake. The frosting is a maple butter cream. The recipe calls to use maple extract, but I used syrup that was left over from breakfast at Cracker Barrel. And what is that on the top of them? That's right...Bacon. These turned out awesome. I will totally be making these again.
The cookies and cream cupcakes turn out pretty well also:
Just a basic butter cream and a cake that is not to sweet because it has crushed up cookies in it.

I made a ton of everything and sent the boyfriend to work to share them with everyone. I made mini cupcakes for those that are on a "diet". I have a book of cupcake recipes and I found a few others that look good. Maybe this weekend I'll make some different ones.

Breakfast of Champions
Sundays are a lazy day at the house. Most Sundays I get up and make breakfast. Sunday morning breakfast is usually includes pancakes or French toast. It always includes bacon. Mmmmmm.....bacon. I found the best recipe for pancakes. It is easy to follow and makes really fluffy pancakes. Some times I add chocolate chips, it would be good with bananas too.
Butter Milk Pancakes:
1 Cup Flour
1 Tbsp Sugar
1 Pinch Salt
2 Tsp Baking Powder
1 Tsp Baking Soda
2-3 Tbsp Bacon Grease
1 Egg
1 Cup Butter Milk
Mix all the dry ingredients together. Separate the egg, mix the grease, buttermilk and egg yolk together. Whip the egg white until frothy. Add the liquid ingredients to the dry. I usually let them sit for a little bit before folding in the egg white. This seems to make the pancakes fluffier. I usually just cook them in a non stick skillet.
French Toast is really easy. I just mix about 6 eggs, half a cup of milk, a little sugar, and some vanilla together. Sourdough or potato bread work well to make the toast. The boyfriend and the cousin like to put powder sugar on theirs. It would also be good with fruit.
Sunday morning breakfasts are fun and a great way to make a huge meal and have one day a week to kinda pig out. :) Enjoy!!

Food and Blogging....
I'm starting a food blog. Yeah I know there are a ton of them out there....but see I have all these pictures of food and all these ideas for food. Might as well share them here. I've been collecting pictures of different creations and also finding recipes that I have been trying. This is the place where those pictures are going to go, along with information about where I got them. I will also probably be sending out a newsletter every week or so with recipes and other information about cooking or baking, so feel free to sign up.
